September 29, 2023

Thought I would share an excerpt from a recent book that I started reading: "Regeneration: Ending the climate crisis in one generation" by Paul Hawken.

One of the main contributors that the book attributes to obesity is "Junk Food" which is "food that does not nourish." Mass-produced animal foods and ultra-processed food-like concoctions made of soy, corn, fats, sugar, salt, chemicals, and starch makes up 60 percent of diets in the United States. The book goes on to say that "because of the ubiquity, addictiveness, and constant promotion of industrialized food, nearly 75% pf Americans are obese or overweight and 1/3 are prediabetic or diabetic.

We don't feel like the conversation is had enough around ingredients and what is in the food our communities are eating. Cheap, extra-large portions are often that way for a reason. We appreciate all of you that are partnering with us to offer clean, nutritious food to your customers and helping reverse the unfortunate trend towards cheap, low quality, low nutrition food. We stand by our values of clean, natural meat from start to finish and hope that through more education and awareness we can make an impact!

Thanks again for your support of clean ingredients and offering those to your customers!

Braised Beef Short Ribs with Parmesan Polenta and Roasted Carrots Recipe

Few dishes capture comfort like braised short ribs. The aroma of slow-cooked beef, rich sauce, and creamy polenta creates that unmistakable feeling of a meal worth slowing down for. For this version, I used Fischer Farms bone-in short ribs- a mix of one single-bone and one double-bone cut- to showcase the versatility Fischer Farms offers chefs and home cooks alike.
