The Big Softy cheese was developed as a soft cheese that is créme fraiche-like with a smooth texture and rich flavor. It is a cheese so fresh that the whey may still be seeping from the cheese. Samples of the cheese have been described as, “ mild, creamy, sweet, buttery, and decadent”. This totally vegetarian (made with vegetable rennet) cheese is a versatile cheese that can be eaten on its own, enhanced with savory or sweet flavors or added to other dishes. Suggestions for use include serving on crackers; spreading on bagels; enhancing with dried herbs, gourmet salts, olives or honey; sprinkling on salads; or stuffing into meats and tortillas.
