Starting with new wheels of Juana, our Manchego-style hard cheese, we wash the rind with local wines. After aging at least a month, the result is a dramatic crimson rind. The cheese inside has rich flavors of nuts and cream along with subtle and intriguing fruity and floral flavors from the wine washing.
