Slow Cooker Apricot Shredded Pork

Ingredients
- (small) 2 Sweet onions, thinly sliced
- (1 C or a 12 oz jar) Apricot Preserves
- (1/2 C) Light brown sugar, packed
- (1/2 C) BBQ Sauce, that is more bold and spicy
- (2 TB) Worcestershire sauce
- (1/4 C) Apple cider vinegar
- (1/2 tsp) Red pepper flakes
- (4 lbs) Pork Loin Boneless - Whole
- (1/2 C) Cold water
- (2 TB) Cornstarch
- (1 tsp) Fresh grated ginger
- (to taste) Coarse salt/ ground black or white pepper
- Rolls or buns
Directions
You can mix all the first step ingredients in a bowl then pour over the uncooked meat. You can even omit this step and mix it all in the crock, then add the meat and sliced onions.
Don’t want to slice the onions in the morning? Then slice them the night before and place them in a container. I have made this with both a pork roast and pork tenderloin. Both turned out very well!

- In a bowl combine first 7 ingredients.
- Place pork in crock.
- Pour mixture on top.
- Cook on low for 8-9 hours or high for 4-5.
- Remove meat from crock and shred with forks.
- Whisk in remaining ingredients.
- Return lid and cook on high heat for 15-30 minutes or until thickened.
- Return shredded pork and liquids that collected with the meat, to the crock.
- Serve on rolls or buns.
