Beef and Gnocchi Skillet Meal

Ingredients
- (2lb) Filet Medallions
- (2 LG) Sweet potatoes, peeled, cut into small cubes
- (1 LG) Sweet onion, peeled, cut into small pieces
- (2 C) Baby bella mushrooms, sliced and cleaned
- (1lb) Gnocchi, uncooked
- (3 normal sized cloves) Garlic, peeled, chopped
- (as you determine) Coarse salt, fresh ground black pepper
- (for each item cooked in skillet) Extra virgin olive oil
- (2tsp) Herbs De Provence (is a blend of bay leaves, rosemary, fennel, basil, marjoram, lavender, parsley, oregano, tarragon, thyme)
Directions
This is an easy meal that utilizes our quick cooking Beef Filet Medallions. To save time, prepare your ingredients ahead of time so you can focus your attention at the stove for this simple beef recipe.
I made this in a wide, deep skillet. Can you make this on a sheet pan? Yes. Can you make this on a flat cooktop? Yes. Can you use another cut of beef cut into small pieces? Of course! Our Beef Strips would also be a great option.
Here are the easy steps for our Beef and Gnocchi Skillet Meal:
Prepare your vegetables- peel and cube your sweet potatoes, peel and cut your onion, clean and slice your mushrooms. Set aside.
In a wide skillet with high sides, add a bit of olive oil and heat to medium.
Season the meat with Herbs De Provence, salt, and pepper.
Add to skillet and cook until just complete- do not overcook.
Turn heat down and remove meat from pan, reserve juices in pan.
Add the uncooked gnocchi and cook on each side, on medium, for 5 minutes each side. Don't worry- they are not crispy and cooked through!
Add to the meat you have removed from the pan.
Give the pan a swirl of olive oil and add the sweet potatoes. Heat on medium heat until just soft- do not overcook. The time will depend on your sweet potato piece size.
To the pan of sweet potatoes, add in the onion and mushrooms- stir to combine.
After 2-3 minutes, return the gnocchi and beef to the pan. Fold gently to combine.
Taste to determine if you need to further season.
Remove from heat.
