Healthy Steak and Sweet Potato Bowl
We prepared this recipe on a Blackstone grill, but with a few adjustments you can make it inside in a skillet!

Ingredients

  • (2 lbs) NY Strip Steak
  • (2 large) Sweet potatoes
  • (2 cloves, chopped) Garlic
  • (1 bunch, washed and cut from stems) Flat leaf parsley
  • (1 tsp) Smoked paprika
  • (2 TB) Unsalted grassfed butter
  • Olive or Avocado oil for drizzling
  • Coarse salt and black pepper for seasoning
  • (*Optional) 1 Sweet onion

This recipe is short on ingredients and long on flavor!

Whether you make it outdoors on a grill or indoors in a skillet, this is an easy one, for sure.

We used Strip Steaks for this but Flat Iron and Fajita Strips would also be a great choice.

Get your ingredients out and ready and the preparation is simple.

Preheat your oven to 400 degrees.

Line a cookie sheet with parchment paper.

Peel both sweet potatoes and cut into cubes.

Cut your onion into similar sizes.

Add both to a bowl to season. Dust with coarse salt, pepper, smoked paprika, and a drizzle of olive or avocado oil. Toss to combine and pour onto the prepared sheet. Bake for 20-25 minutes. Baking time will vary based on your cube size, so adjust accordingly.

Meanwhile, cut your meat into similar sizes as the sweet potato. Add to a bowl and top with coarse salt, pepper, fresh cut flat leaf parsley, and chopped garlic. Drizzle with oil, and toss to combine.

On your hot grill top, add the unsalted grassfed butter. To the melted butter, add your meat. 

Cook to your desired degree of doneness.

Remove from heat and add to the top of the cooked sweet potatoes. Toss to combine.
