Farm to ClusterTruck

The Fischer Farms partnership with ClusterTruck started with a simple phone call between Jon and Joseph Fischer that evolved into a broader discussion around the ClusterTruck conference room table about our food system, what is (and isn't) in the food we eat, and how two Indiana companies could work together to be mutually beneficial.

We at Fischer Farms are a family farm located near Jasper, IN. The rolling hills that we call home have been in our family since 1865. In 2004, Dave and Diana were disappointed with the options available to sell the cattle from our farm and simultaneously, the options for top quality, naturally raised beef at the grocery store. That's when they decided to start processing the cattle from our farm and selling directly to customers. At first, those customers were at farmers markets but soon evolved into restaurants and retail stores as demand grew.

Fast forward a few years and we continue to take pride in the quality of our beef and how it's raised.

  • Premium: top quality genetics and a proven nutrition program results in consistently top quality beef and pork. All beef is also dry aged for 14 days for additional tenderness and flavor
  • Natural: clean from start to finish. Raised without growth hormones or routine antibiotics. Fischer Farms is proud to be the first Certified Responsible Antibiotic Use farm in the country and combine that with minimally processing (no fillers, no artificial additives, etc.)
  • Local: as fresh as it gets. With an incredibly short supply chain, the meat is always cut and delivered fresh without traveling across state (or international) borders
  • Sustainable: we at Fischer Farms are proud to be an innovator in the regenerative agriculture community. We look at the end-to-end lifecycle including soil, air, and water health.

The Fischer Farms Story

family-farm.jpg

Our home farm has been in our family since Dave's great-grandfather bought the land from the sheriff after the civil war veteran who previously owned the land did not return. The land is on rolling hills in southern Indiana that is best suited for cattle. We purchased two neighboring farms and now have 750 contiguous acres, all focused on producing top quality beef.

Monday, we received 4.4 inches of rain, most of it overnight as heavy storms moved through. By Tuesday, I checked our dry dams to make sure everything was holding. The result was simple but telling- very little water had collected.

Few dishes capture comfort like braised short ribs. The aroma of slow-cooked beef, rich sauce, and creamy polenta creates that unmistakable feeling of a meal worth slowing down for. For this version, I used Fischer Farms bone-in short ribs- a mix of one single-bone and one double-bone cut- to showcase the versatility Fischer Farms offers chefs and home cooks alike.
