New Bull Herd on the Farm

We have new residents on the farm, several of them.

A cow contributes only half of a calf’s genetic potential. The other half comes from the bull, which is why bull selection matters so much. We use Expected Progeny Differences (EPDs), a tool that helps predict how future calves will perform, to guide those decisions. These EPDs are established by ranchers taking thousands of measurements on cattle and supplying those to the Angus Association.

Our Shorthorn genetics breeder uses DNA sampling to identify the best performers. We cross these cattle to create a unique combination of tenderness, marbling and taste.

This group of Angus bulls, sourced from the Indiana Beef Evaluation Program (IBEP), was selected with purpose:

• 4 bulls rank in the top 20% for marbling and ribeye area supporting the high-quality, well-marbled beef we’re known for
• 4 bulls rank in the top 30% for docility, helping produce calmer cattle that are safer and easier to handle and more tender beef with less cortisol from stress.
• 2 bulls were chosen specifically for heifers, with strong calving ease and low birthweight scores to support more unassisted first births
• All the bulls are above average for growth, meaning more efficient weight gain and performance and consistent sized steaks.

Every decision we make today shapes the herd of tomorrow and ultimately, the beef on your plate!

The Importance of Dry Dams on the Farm

Monday, we received 4.4 inches of rain, most of it overnight as heavy storms moved through. By Tuesday, I checked our dry dams to make sure everything was holding. The result was simple but telling- very little water had collected.

Braised Beef Short Ribs with Parmesan Polenta and Roasted Carrots Recipe

Few dishes capture comfort like braised short ribs. The aroma of slow-cooked beef, rich sauce, and creamy polenta creates that unmistakable feeling of a meal worth slowing down for. For this version, I used Fischer Farms bone-in short ribs- a mix of one single-bone and one double-bone cut- to showcase the versatility Fischer Farms offers chefs and home cooks alike.
