I had the pleasure of visiting the Lambright family this week who produces the eggs, maple syrup, and honey that we offer. Their beliefs do not allow us to take any pictures but it was a great reminder of the hard work and care that is taken to farm according to their Amish beliefs.

When we arrived, we were greeted by five of Jerry's young grandkids, playing along the farm lane by the chicken coop, dressed in matching straw hats and big friendly smiling faces. We found Jerry cutting boards with two of his sons in the barn behind the house. Jerry informed us that he has 28 grandkids now (14 kids), and all but two are still in the area. After loading up the eggs and honey, we got to catch up on all the new things they have in progress on the farm including when they expect the new maple syrup crop to be finished! He enjoyed hearing about all the different restaurants and stores that his products were being used at.

The Importance of Dry Dams on the Farm

Monday, we received 4.4 inches of rain, most of it overnight as heavy storms moved through. By Tuesday, I checked our dry dams to make sure everything was holding. The result was simple but telling- very little water had collected.

Braised Beef Short Ribs with Parmesan Polenta and Roasted Carrots Recipe

Few dishes capture comfort like braised short ribs. The aroma of slow-cooked beef, rich sauce, and creamy polenta creates that unmistakable feeling of a meal worth slowing down for. For this version, I used Fischer Farms bone-in short ribs- a mix of one single-bone and one double-bone cut- to showcase the versatility Fischer Farms offers chefs and home cooks alike.
