Holiday Week On The Farm

For short weeks like this holiday week, we try to just get the necessities done and give our employees some much-deserved time off. However, cattle still need to eat and be checked every day so we can never shut down for a day. We alternate weekends to feed so that everyone only has to work about one weekend per month for a few hours per day. In addition to feeding, we also focus on what we call "Cow Comfort". Cow comfort to us is making sure each and every group has clean, dry places to lay down, plenty to eat, water (especially when it's cold), and all the other necessities to keep them low stress. Winter can be hard on cattle, especially when it is wet and cold. Thankfully this nice warm weather has actually resulted in some grass-growing days!

Braised Beef Short Ribs with Parmesan Polenta and Roasted Carrots Recipe

Few dishes capture comfort like braised short ribs. The aroma of slow-cooked beef, rich sauce, and creamy polenta creates that unmistakable feeling of a meal worth slowing down for. For this version, I used Fischer Farms bone-in short ribs- a mix of one single-bone and one double-bone cut- to showcase the versatility Fischer Farms offers chefs and home cooks alike.
